Strawberry Mojito: A Summer Fan Favorite

As the days get longer and the Texas sun gets hotter, it’s more important than ever to stay hydrated. We’ve curated a cocktail that does just that—and then some! Think ice clinking in a glass, fresh citrus, and a little something extra to keep you cool through those long afternoons that turn into warm summer nights.

Total Time: 10 minutes

Yield: 8 mojitos

Ingredients:

  • White sugar (for rimming)
  • 2 large limes, quartered
  • ½ bunch mint leaves
  • 7 strawberries, quartered
  • 1 cup white sugar
  • 2 cups club soda
  • 1 cup white rum
  • Ice

Instructions:

  1. Prep the cocktail glasses! Pour an even layer of sugar onto a small, shallow plate. Run a lime wedge around the rims of your glasses, then dip them into the sugar to coat. Set aside.
  2. Squeeze all of the lime wedges into a glass pitcher. Might as well toss those juiced limes in there too. Add the mint, strawberries, and 1 cup sugar. 
  3. Then muddle it all together to release the strawberry juice and mint oil. Avoid over-muddling the mint—gently bruise the leaves instead of shredding them to keep the drink fresh and prevent a bitter flavor.
  4. In the same pitcher, stir in club soda and rum until the sugar is fully dissolved.
  5. Pour into your prepared glasses over ice, kick back, and enjoy!
  6. Garnish with a strawberry slice and mint sprig. Cheers!
